Atvim Pajta
(Translates to autumn spirit)
A Atutæ autumn warmer.

Ingredients
1 small red onion
1 large leak
4 carrots
3 Cyprus potatoes
Half cup frozen peas
1 vegetable stock cube
1/2 TSP Onion granuals
1/2 TSP Garlic granuals
Pinch white pepper
1 crushed garlic cloves
1 finger chilli (seeds removed)
2 Heaped TBSP coconut milk
500ml boiled water

Method
1. To a stock pot add crushed vegatable stock cube, onion granuals and garlic granuals.
2. Pour in 500ml boiled water.
4. Peal and roughly chop carrots and potatoes and add to the pot.
5. Roughly chop the leak and chilli and add to the pot.
6. Add crushed chilli and half cup frozen peas.
7. Add a pinch white pepper, cover pot with lid and let boil until potatoes are soft.
8. Blend all ingredients with a hand blender.
9. Stir in coconut milk and simmer for 5-10 mins.
10. Turn off heat and serve hot with a sprinkle of parsley.

A Atutæ pesto

80g spinach leaves
1/8 cup sunflower seeds
1/4 TSP onion granuals
1/4 TSP garlic granuals
1/4 TSP basil
1/4 TSP coriander leaf
1 spring onion
2 crushed garlic cloves
Olive oil

1. Roughly chop spring onions and garlic.
2. Add all ingredients to a food processor and slowly add olive oil until a pesto consistency is reached.
3. Transfer to a sterile jar and keep in the fridge for up to a week.

Ingredients:
Ready rolled puff pastry.
Svađoj.
Grated cheese.

Method:
1. Cut pastry to 4 by 4 inch squares.
2. Spread Svađoj on top and add grated cheese.
3. Cut corners to almost the middle and food each alternating corner into the middle to form a star shape.
4. Bake at 180 °c for 15-20 mins

Tůcken Kyeræs (Chicken Skewers)

Ingredients:
1. 2 well sized Chicken breasts.
2. Half orange juice and zest.
3. 1 Yellow pepper.
4. 1 Courgette.
5. 1 Red onion.
6. 3 Cloves Garlic.
7. 8 Basil Leaves.
8. Approx. table spoon worth of fresh Thyme.
9. 1/5 cup Olive Oil.
10. 1 ½ teaspoons freshly ground Black Pepper.
11. 1 teaspoon Garlic & Herb salt.
12. Cherry tomatoes (optional)

Instructions:
Dice chicken into bite size pieces, place in a zip lock bag.
Cut courgette into half a centimetre pieces that are bite size and add to a separate zip lock bag, cut up the yellow pepper into square bit size pieces and place in the same bag as the courgettes.
Prepare the marinade.
Marinade:
Grate the zest off half an orange, grate the 3 cloves of garlic straight after; then finely cut the basil leaves into the orange zest and garlic.
Add this to a small bowl along with the tablespoon of Thyme, Black Pepper and garlic and herb salt.
Squeeze in the juice of half a lemon and poor in the half cup of olive oil. Give it a stir your marinade is complete.

Divide the marinade between the chicken and vegetables and give it a good rub before sealing and let it marinate for a minimum of 6 hours or leave until the next day (24 hours)

Assembly:
Cut up the onion to bite size pieces, and start skewering in the following order, marinated yellow pepper, marinated chicken, marinated Courgette until the top. (Cherry tomatoes as an optional topper)

Preheat oven to 180c and cook for 30 mins until chicken is no longer pink inside. (cooking time may vary so cook to your ovens desires). These can also go on a BBQ however have not tested that method yet.
Serve with jacket potato, cous cous and salad of your choice.
